Ok, so this actually happened a couple of weeks ago. I'm a little slow getting things posted. Hunter and I went out and finally dug up our sweet potatoes. It was a great job for a kid who loves to play in the dirt and water. He was a very good helper especially when it came to spraying them off. Our poor sweet potatoes got totally chewed off by some pesky varmint right down to the ground within a week of planting them last spring. Lo and behold they grew back, and by the time they did, we had a fence up around our garden. They sure are hardy. Needless to say that really set them back, so I decided to leave them in the ground longer. Besides I had apples to make into sauce, and they spoil faster than sweet potatoes. We got quite a nice crop of sweet potatoes despite the rough start. We've enjoyed some baked, and I have canned a couple of batches. I also tried something new - I made Sweet Potato Pie last week. I feel like a true southerner now even though I live quite a ways north of that Mason Dixon line.

Sweet Potato
